Iron is an extremely important mineral, especially to teenage girls, women during childbearing age, and children who are bottle fed past 12 months. There are other groups at risk for iron deficiency as well, including the elderly, persons with illnesses such as Crohn’s Disease and Ulcerative Colitis, Extreme Athletes, persons taking particular types of medications, and vegetarians.

Since my last year in undergraduate studies, I've been torn between the love of food and nutrition science and teaching in general.
